



Yesterday, with helping hands, the garlic was pulled from the field, loaded onto greenhouse tables, & laid out to cure for a few weeks in the shade. While pulling the bulbs from the soil, through their layer of straw mulch, it is easy to be enamored. A human baby can be grown within the same period of time that garlic takes to grow. Multiple seasons are greeted within the period of gestation. But for the clove, the womb is the soil that has been amended to meet the needs of healthy, bulbous growth.
In March, as the equinox passes & the fields begin to awaken, garlic is the first crop to admire, their greens peeking through. Come May, the storage garlic has been gone for months & unless we have prepared for this by processing garlic powder, our meals tend to go without. And in due time, the garlic generously offers the scape, the curly, tasty gem that would become a seed pod. But rather, we begin wandering down the beds to pull each scape, communicating to the plant that energy should be put into the underground bulb.
And we have reached July. We know to begin pulling when multiple sets of leaves begin to yellow & dry up & the cloves are well defined. This is the first big storage crop that we process every year. And every harvest I am amazed at how wonderfully the flow of the things occur. Shortly after the garlic has been dried, clipped, & organized, we fill the newfound table space with onions. And then winter squash.
And come October, we will know the season’s end is near when we tuck cloves back into the soil, offering our gratitude & wishing them luck.
