CSA Week 2



It is a goal of ours to have salad growing year-round. And throughout the year the joy differs….. in the fall, we experience the first frosts that sweeten & amplify flavor. In the winter, they are a precious gem to savor. Spring is greens season! While fruiting crops approach their harvest windows, the fields are overflowing with tender salads. After working on farms for many years I have found the variety in the fridge a creative offering……
This past week we shared a kale caesar salad with friends that was adorned with grilled veggies & salmon. I toasted up the baby bok choy from last week on the cast iron with lemon & olive oil for dipping in hummus. Every morning we eat spicy mix or spring mix with eggs. If we have a plethora of kale on hand, I dehydrate it in the oven, grind it into powder, enjoy it in smoothies, soups, broths, pizzas, etc. Handfuls of greens are added to sandwiches, topped with spring slaws, paired with grains.
I hope to spark some enthusiasm for the moment we are in, the transition from spring to summer. And soon here, we will all be inundated with fruiting crops!
