This is our best guess of what will be in your share! Harvest list subject to changes :)

Tomato Soup!
Last week I oven-roasted a flat of seconds tomatoes with garlic, thyme, sage, basil, onions, salt & olive oil. Once the collection started to slightly brown I transferred it all to a large pot on the stovetop. Then added:
~ a large dash of cream
~ zataar
~ salt & pepper
~ heaping spoonful of honey
~ fresh basil
Blended and simmered to desired consistency.
Served with bread that was oven roasted with olive oil, raw goat romano, chives & basil.
Also lovely topped with fresh herbs, goat cheese, & croutons OR served chilled.
Tis the season for preserving! Every August we make sure to freeze plenty of cherry tomatoes for our winter meals. I do this by slow roasting a pan of cherry tomatoes, olive oil, garlic, & salt on a low temp (around 300) for 4-6 hours. Once they are looking slightly golden / less juicy I pull them out of the oven, let them cool, & seal them into freezer bags!
